The inheritance pattern is being expressed, because the color of the sweet pea flowers is made up of hundreds of genes, not just a few. It is only logical that, with so many different genes determining the color, the offspring would receive some from one parent and some from the other, so the overall color of the offspring flower would be somewhere between red and white.
